So, I didn't work out last night. Instead I went home, relaxed for about 20min and cooked all night long. Literally I looked up at 8pm and was like, whoa where'd the time go?

I made Minestrone Soup which is one of my favorites full of vegetables and Italian seasons and barely any fat, 1 little splash of olive oil to cook with and 2TBS of pesto at the end. A really healthy filling lunch for the next couple of weeks. I brought some for my lunch (making myself hungry just thinking about it!). Tonight I want to sit down and figure out exactly what the calories are.

I also made mini spinach and pepper frittatas. So easy, just saute the vegetables, put them in big muffin tins, add the beat eggs (I did 1 egg, 1 egg white per muffin) and cook for 1/2 hour on 350. They are perfectly english muffin sized for quick breakfasts they heat up in the microwave w/ a sprinkle of feta they are delicious!

Then I cooked 4 cups of oatmeal for the rest of my breakfasts this week. And, I even managed to clean the kitchen afterward! I did eat around 8:30, which was way later than I like, but I had completely forgotten until then. I had a couple taco shells and salsa. I like using taco shells instead of chips, because you can't keep reaching into a bag for more. And they need to be heated (I toast them) to be really crispy, so the chances of me doing that a second time, if I was tempted to have more, are pretty slim.

I went to bed around 11 totally exhausted and unable to fall asleep. :( I really wanted to get up at 6 this morning so I could work out like last week. But I just couldn't. I slept until 6:30 and did do some crunches - 20 slow bicycles, 25 crunches, 25 side crunches on each side (50 total), and 30 scissors which also work the inner thigh. My upper body is insanely sore from Sunday when the BF and I did a Cross Fit 10min beginner work out (pullup, pushup, squat circuits). I can't do a pull up with out a chair, but god, even that made me hurt - My arms still feel like jelly.

Today has been:
200 Oatmeal w/ fruit and honey
50 coffee

at work planning on:
65 yogurt
150 cereal
250? Minstrone

I'm not sure about dinner... maybe pita, veggies and hummus. at 250
Which leaves me with a little bit of wiggle room, for a slice of Banana bread or 1/4 C of ice cream if I go see the BF.

He's going out of town on Thursday for 10days. I am not looking forward to him being gone, but I am planning on some heavy restriction while he's gone. He's so hard to maintain will power around. But I'm thinking fruit and juice for a few days, then add in some yogurt and veggies, then adding in beans and rice. Basically modifying that detox diet I did a year ago. Since we won't be hanging out, and my summer class is almost over (exam in a week) I should have alot of exercise time. I might study while on the stationary bike.

Oh, free for all restriction time coming up for you! That is awesome that you cooked and planned your healthy meals so far in advance. I am working on something like that.
